Ingredients 

Main Ingredients

  • 1 lb Chicken breast, cooked and shredded
  • 2 cans Great Northern beans, drained and rinsed
  • 1 can Corn, drained
  • 1 cup Chicken broth
  • 1 cup Sour cream
  • 1 cup Shredded cheese
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ¼ teaspoon Cayenne pepper

Instructions 

  1. 1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. 2. Add the shredded chicken, beans, corn, and chicken broth to the pot.
  3. 3. Stir in the cumin, oregano, salt, black pepper, and cayenne pepper.
  4. 4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. 5. Remove from heat and stir in the sour cream and shredded cheese until melted and well combined.
  6. 6. Serve hot, garnished with additional cheese, sour cream, or chopped cilantro if desired.
