Main Ingredients
- 1 lb Chicken breast, diced
- 2 cans Great Northern beans, drained and rinsed
- 1 can Corn, drained
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 2 cups Chicken broth
- 1 teaspoon Ground cumin
- 1 teaspoon Dried oregano
- 1 teaspoon Chili powder
- 1 cup Sour cream
- 1 cup Shredded cheese
1. In a large pot, sauté the onion and garlic until soft.
2. Add the diced chicken and cook until browned.
3. Stir in the beans, corn, chicken broth, cumin, oregano, and chili powder.
4. Bring to a boil, then reduce heat and simmer for 20 minutes.
5. Remove from heat and stir in the sour cream and shredded cheese until melted and well combined.
6. Serve hot, garnished with additional cheese or sour cream if desired.
