Ingredients 

Main Ingredients

  • 1 lb Ground Beef
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 3 Carrots, sliced
  • 2 Celery stalks, sliced
  • 1 Zucchini, diced
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Beef Broth
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme

Instructions 

  1. 1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. 2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Add the carrots, celery, and zucchini to the pot. Cook for about 5 minutes, stirring occasionally.
  4. 4. Stir in the diced tomatoes (with juice), beef broth, salt, black pepper, and dried thyme. Bring to a boil.
  5. 5. Reduce heat and let the soup simmer for about 30 minutes, or until the vegetables are tender.
  6. 6. Taste and adjust seasoning if necessary. Serve hot.
