- 1 can Black beans drained and rinsed
- 0.5 cup Bread crumbs
- 0.25 cup Onion finely chopped
- 1 clove Garlic minced
- 1 tablespoon Chili powder
- 1 teaspoon Cumin
- 1 teaspoon Salt
- 0.5 cup Corn optional
- 1 Egg beaten
- 2 tablespoon Olive oil for cooking
1. In a mixing bowl, mash the black beans with a fork until thick and pasty.
2. In a food processor, finely chop the onion, garlic, and corn (if using).
3. Stir the chopped vegetables into the mashed beans.
4. In a small bowl, mix the egg, chili powder, cumin, and salt.
5. Stir the egg mixture into the mashed beans and vegetables.
6. Mix in the bread crumbs until the mixture is sticky and holds together. Divide the mixture into four patties.
7. Heat the olive oil in a large skillet over medium heat. Cook the patties until heated through, about 4-5 minutes per side.
